What You'll Need:

  • 1 bunch sarson (mustard greens), washed and chopped
  • 1/2 bunch spinach, washed and chopped
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 green chili, chopped (optional)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon garam masala powder
  • 1 tablespoon salt, or to taste
  • 1 tablespoon makhani (cashew cream)
  • 1 tablespoon ghee or oil
  • Water

Instructions:

  1. Heat ghee or oil in your Avias small pressure cooker. Add cumin seeds and let them crackle.
  2. Add onions and cook until softened.
  3. Add ginger, garlic, and green chili (if using) and cook for another minute.
  4. Add tomatoes and cook until mushy.
  5. Add chopped sarson and spinach and cook for 2-3 minutes, stirring occasionally.
  6. Add red chili powder, turmeric powder, garam masala powder, and salt. Stir well.
  7. Add water to cover the greens. Close the lid of your Avias pressure cooker and cook on high heat for 2-3 whistles.
  8. Let the pressure release naturally.
  9. Open the lid and mash the greens slightly with a potato masher or the back of a spoon.
  10. Stir in makhani and adjust seasonings to taste.
  11. Serve hot with roti, naan, or paratha.
